Answers: Most of the above answers are marginally correct as to what cause these. It is water vapor or river vapor converted to ice crystals.
Contrails are individual created from the engines (usually turbine but yes WWII bombers flew so high their engines did this as well). It happen. The process happens when the engine exhaust increases the dampen content in the atmosphere past the saturation point (pretty comfortable at high altitude). This turns to rime crystals at such low temperatures i.e. why the really high ones tend to stick around a long time and sometimes catalyze a cloud.
Why some do and some don't? A bunch of reason:
- Different altitude (hard to judge when you are on the ground).
- Different exhaust temperature
- High by-pass or low by-pass engine (low by-pass will create larger/longer contrails)
It has to do near the heat of the engine running through the cold nouns condensing water vapor. Not the contrail stories that the wackos are chitchat about. They reckon that someone is spraying us with some sort of chemicals. Nuts huh?

water is a byproduct of adjectives petroleum fuel combustion, just look at adjectives the vapor coming out of your exhaust after you start your car. at illustrious altitude, the water vapor surrounded by the jet exhaust forms rime crystals almost immediately, because at 35,000+ foot it's about -60 degree up there. for adjectives you chemtrail freaks out there, don't forget to wear your tinfoil hat when you go outside
